Rice Pudding (Sütlaç)
Ingredients | Measure | Amount |
Rice | 1/2 cup | 90 gr |
Water | 1 1/2 cup | 300 gr |
Starch | 1 1/2 tablespoon | 10 gr |
Milk | 5 cup | 1 kg |
Sugar | 1 1/3 cup | 240 gr |
Lemon peel (grated) | 2 teaspoon | 10 gr |
Cinnamon | 1 teaspoon | 2 gr |
Preparation
Wash rice and
cook for 20 minutes with 1 cup of water over low heat. Dissolve starch in 1/2
cup of water. Add starch and milk into cooked rice, stir and cook for 10 minutes.
Add sugar and lemon rind. Stir and cook for 2 minutes. Pour into dessert bowls.
Sprinkle with cinnamon.

Regional Characteristics:
It is a common
and simple dessert, easy to prepare and yet it is delicious when served with
different foods. It can be served with crushed nuts, fresh fruits or preserves.
If baked sütlaç is to be prepared 1/2 cup of sütlaç is reserved; cooled.
Combined with a beaten egg. This mixture is spread over pudding cups. Baked for
10 minutes
until golden. This rice pudding or "Sütlaç" is called "Sütlü" or "Sütlü Aş"
in some regions of Anatolia. "Sütlü" means "With milk", "Sütlü Aş" means "Meal
With Milk".
