Anchovy Burger

Anchovy Burger (Hamsi Köftesi)

Anchovy | - - | 1 kg |
Bread (stale) | 3 thin slices | 90 gr |
Cornflour | 1 cup | 110 gr |
Egg | 1 piece | 50 gr |
Salt | 1 1/2 teaspoon | 9 gr |
Black Pepper | 1 teaspoon | 2 gr |
Allspice | 1/2 teaspoon | 1 gr |
Parsley | 1 1/2 bunch | 90 gr |
Oil (absorbed
during frying) | 2 tablespoon | 20 gr |
Preparation
Clean anchovies
(remove entrails, heads and backbones). Rinse and drain. Chop finely. Soak bread
slices in tap water for a few minutes. Squeeze and dry. Combine fish, bread, half
of cornmeal, blending well. Add egg and chopped parsley. Season with salt and
spices. Mix throughly. Shape into egg sized oval patties. Coat with remaining
cornmeal. Pan fry in oil on both sides in a non-stick pan until golden brown.
Serve hot.

are removable. It is garnished with lemon wedges and served with vegetable salad. Dry bread srumbs can be used insted
of stale soaked bread slices.
