Shish Meat Balls (Şiş Köfte)
Ingredients | Measure | Amount |
Onion | 2 medium size | 120 gr |
Lamb Ground Meat (low fat) | 4 1/3 cup | 750 gr |
Fine bread crumbs (dry) | 1/2 teacup | 35 gr |
Salt | 2 1/2 teaspoon | 15 gr |
Black Pepper | 1 teaspoon | 2 gr |
Oil | 2 tablespoon | 20 gr |
Preparation
Combine ground
meat, bread crumbs, gratedonions, salt and pepper. Blend thoroughly. Knead for
10 minutes. Divide into egg sized pieces mal balls. Thread each ball on metal
skewers. Squeeze threaded meat balls firmly on skewers with slightly wetted fıngers
until 2 1/2 cm (1 inch) in diameter. Leave finger prints over shish köftes.
Brush with oil. Grill over charcoal or broil in oven until golden brown on all
sides. Serve immediately while hot.

Regional Characteristics:

sized meat balls and threaded on skewers alternately with various vegetables,
such as tomatoes, green peppers, eggplants and mushrooms and broiled together.
It is served for lunch or supper as a main dish.
