Green Lentil Salad (Mercimek Piyazı)

Green lentil | 1 cup | 170 gr |
Water | 2 cup | 400 gr |
Green Onion | 3 medium size | 45 gr |
Parsley | 1/3 bunch | 20 gr |
Mint fresh | 3/4 sprigs | 10 gr |
Green Pepper | 1 medium size | 15 gr |
Salt | 1 1/2 teaspoon | 9 gr |
Olive Oil | 4 tablespoon | 40 gr |
Lemon juice | 3 tablespoon | 30 gr |
Red pepper | 1/2 teaspoon | 1 gr |
Preparation
Soak lentils overnight
with water. Cook for 25-30 minutes or until tender; drain. Combine lentils with
thinly sliced onions, pepper rings minced parsley and mint leaves; mix well.
Season with salt and red pepper. Beat olive oil and lemon juice together. Arrange
lentils in a serving dish. Sprinkle dressing over. Serve cold.
