Ingredients | Measure | Amount |
Tomato | 4 small size | 400 gr |
Green Pepper | 3 medium size | 45 gr |
Onion | 2 medium size | 120 gr |
Butter or margarine | 4 tablespoon | 40 gr |
Tomato paste | 1 tablespoon | 10 gr |
Water | 5 cup | 1 kg |
Salt | 2 teaspoon | 12 gr |
Bulgur | 3/4 cup | 110 gr |
Preparation
Saute chopped
onions in margarine for 7-8 minutes until tender crisp. Add tomato paste salt
and water stir. Bring to boil. Add peeled and cubed tomatoes, chopped green
peppers and bulgur, mixing well. Simmer for 20 minutes. Serve hot.

Regional Characteristics:
This soup is served
widely in southern part of Türkiye. Some recipes call for potatoes along with
tomatoes. In winter dried form of tomatoes or tomato paste is used instead of fresh
ones. In İçel province it is called "lepe".
