with Tomato (Domatesli Gözleme)

Sugar | 1 teaspoon | 4 gr |
Water (warm) | 1 1/2 cup | 300 gr |
Tomatoe | 2 large size | 280 gr |
Green Pepper | 10 medium
size | 150 gr |
Parsley | 1 bunch | 60 gr |
Onion | 1 medium size | 60 gr |
Oil | 2/3 cup | 130 gr |
Cokelek | - - | 100 gr |
Black Pepper | 1/2 teaspoon | 1 gr |
Margarine | 1/3 cup | 65 gr |
Preparation
Prepare raised
dough as instructed in "Cevizli Çörek" (Shortbread with Walnuts). Set aside.
For fılling: Saute fınely chopped onion and green peppers (stems and seeds removed)
in oil for 2-3 minutes. Stir in diced tomatoes. Simmer for-2 minutes. Season
with salt and pepper. Remove from heat; cool. Blend in çökelek and chopped parsley.
Divide into 10 portions. Prepare gözlemes following instructions in "Peynirli
Gözleme" (Gözleme with Cheese). Brown gözlemes on both sides. Serve hot.

Regional Characteristics:
This variation
of gözleme is usually served during summer months with ayran. In Kütahya province
tahin or poppy seeds are used as fılling. Instead of çökelek, cheese can be
used.
