Winter Vegetables - Meat Stew (Kış Türlüsü)

Onion | 1 large size | 100 gr |
Kuşbaşi et | - - | 250 gr |
Margarine | 3 tablespoon | 30 gr |
Tomato paste | 1 1/2 tablespoon | 15 gr |
Salt | 2 teaspoon | 12 gr |
Black Pepper | 1/2 teaspoon | 2 gr |
Water (hot) | 3 1/2 cup | 700 gr |
Leek | 2 large size | 250 gr |
Carrot | 3 medium size | 250 gr |
Potatoe | 5 medium size | 500 gr |
Celery | 1 small size | 250 gr |
Preparation
Cut meat into
3-4 cm (1 1/4-1 1/2 inch) chunks. Combine with fınely chopped onions. Brown
in margarine for 8-10 minutes. Drain. Add tomato paste, water, salt and pepper;
stir. Cover and simmer for 40-45 minutes or until meat is tender. Pare potatoes
and carrots (or scrape carrots). Remove unwanted parts of other vegetables.
Cut all into 3-4 cm ( 1 1/4-1 1/2 inch) chunks. Stir in simmering meat, mixing
well. Cover and simmer for 20-25 minutes or until vegetables are tender: Serve
hot.

okra, green peppers, tomatoes and garlic are substituted for winter vegetables.
It is always served with rice or bulgur pilaf. Sometimes cheese börek or cheese
macaroni is served instead of pilaf. Cacık makes a good combination.
