Dill Weed Pilaf

TURKISH VEGETARIAN COOKING

PILAV

DILL WEED PILAV (Dereotlu Pilav)

1 cup rice
1 small onion, chopped very finely
2 level tablespoons butter
1/2 cup chopped fresh dill
1 1/2 cup boiling water
salt and pepper to taste

Melt butter in a small pot, add finely chopped onions and cook stirring until transparent, add washed and drained rice and stir fry for two or three minutes. Add boiling water and salt and pepper and cover. Rice must be cooked over very low heat for 20 minutes, then turn off heat and place a two-fold paper towel over the pot and under the lid let the rice rest for 20 minutes before serving. Add chopped fresh dill just before serving mixing it gently with a fork.
