BEAN PURE (Fava)

cups dried fava
3 cups water
3 cloves garlic (mashed)
2 teaspoons salt
2
teaspoons sugar
1/2 cup olive oil
1/2 cup lemon juice
Olives and parsley
to garnish
(A variation is with 1/2 cup of tahini instead of oil)
Soak
dried fava overnight then boil in 3 cups of water until mushy. Place fava and
all the rest of the ingredients in a blender (or mix well by hand) and pour into
two deep platters. When set, cut into squares and serve with olives and parsley
as garnish. (When tahini is used instead of olive oil this would be a variation
of the "Hummus" which is made with chick peas, then it would also need
paprika as a garnish).
