BULGUR SALAD (Kısır)

In other middle Eastern countries a variation of this salad is called tabooley.
I cup fine bulgur
1/2 cup tomato paste
I large tomato
10 green onions cut into small pieces
I cup chopped parsley
I cup hot water
I large chopped bell pepper
2 teaspoons hot red pepper
1/2 cup olive oil
1/2 cup vinegar
2 teaspoons salt

Place the bulgur in a large bowl and sprinkle with hot water. Cover and let stand for 1/2 hour. Take cover off and add the tomato paste, vinegar, oil and salt and mix well. Then add all the other ingredients and mix again and serve heaped on a platter that is lined with boston lettuce leaves.
