GREEN LENTIL
SALAD (Mercimek Salatası)
1 cup green lentil
2 cup water
3 medium size green onion
1/3 bunch parsley
3/4 springs mint fresh
1 medium size green pepper
1 1/2 teaspoon salt
4 tablespoon olive oil
3 tablespoon lemon juice
1/2 teaspoon redpepper
Preparation
Soak lentils
overnight with water. Cook for 25-30 minutes or until tender; drain. Combine
lentils with thinly sliced onions, pepper rings minced parsley and mint leaves;
mix well. Season with salt and red pepper. Beat olive oil and lemon juice
together. Arrange lentils in a serving dish. Sprinkle dressing over. Serve cold.
