SHEPHERD'S SALAD (Çoban Salata)

2 large firm tomatoes
1 large onion
3 long peppers or I bell pepper
1/2 cup chopped parsley
1 medium cucumber
1/3 cup vinegar
1/3 cup olive oil
1 teaspoon salt
1 teaspoon black pepper

Cut onions crosswise thinly and sprinkle with some salt. Using hands squeeze onions until they are wilted then wash and drain. Place onions in the salad bowl and chop tomatoes, peppers and the cucumber. Add chopped parsley. Place oil, salt and vinegar in a small bowl and whisk with a fork and spread over the salad evenly and toss. Garnish with ripe olives.

Serves 4
