Rice and Yoghurt Soup

RICE AND YOGHURT SOUP (Pirinçli Yoğurt Çorbası)

1/2 cup rice
6 cups water
1 1/2 tsp salt
2 cups yoghurt
2 tsp dried mint leaves (crushed) or fresh mint very finely chopped)
1 tblsp butter or margarine
1 tsp paprika

Wash and drain the rice and put in a pot with 6 cups of water and boil until the rice is very tender and the water is thickened (stirring occasionally). Put the 2 cups of yogurt in a bowl and beat with a fork until smooth and add to the boiled rice gradually as you stir the mixture. Set aside and melt the butter in a separate pan and add the paprika. When it bubbles pour over the soup before stirring it add the crushed mint leaves and serve.

Serves 6-8.
