VEGETABLE SOUP (Sebze Çorbası)

Heart of a small cabbage
1 cup diced carrots
1 medium leek
1/2 cup diced potatoes
2 whole tomatoes
1 large onion
1/4 cup rice
8 cups water
2 tsp salt
1 medium bunch parsley
2 tsp paprika
1/2 cup butter or margarine

Chop the onion and the tomatoes and add to the margarine or butter melting in the pot. Stir and cook until you have a mushy tomato and onion mixture, add salt and paprika then add all the vegetables that are cpopped and diced and the water. Cover and simmer for an hour or more, if the soup is too thick another cup of water may be added. Serve piping hot.

Serves 6-8.
