GRAPE LEAF ROLLS (Yaprak Sarması)

3 rolls of pickled grape leaves
All other ingredients as for bell peppers.

Put the leaves in a pan of boiling water. Boil for five minutes. Drain, cool and separate the leaves. Put one heaped tablespoon of filling on each leaf and roll as for cabbage leaves. Place the filled leaves side by side and in layers in a pan and simmer.

Serves 6.

Note: If you find fresh grape leaves, you would use about 1/2 a pound and proceed as above. But be careful about the tenderness of the leaves. If you have a grape arbour and you are picking the leaves yourself, pick only the ones towards the end of the branches. They will be young and lighter green than the older ones. You could pick them from your neighbour's garden also!
