STUFFED ARTICHOKES (Enginar Dolması)

6 large fresh artichokes
All other ingredients are the same and are prepared in the same way as for stuffed peppers, omitting the tomatoes.

Cut off one fourth of each artichoke from the top. Leave three inches of the stem. Remove all outer leaves except for two rows of inside leaves. Carefully scoop out the fine furry center. Fill the inside. Place them top-side down in the pan and simmer as before. When cooled garnish with lots of fresh dill weed springs.
