Stuffed Eggplants

STUFFED VEGETABLES (Dolmalar)

STUFFED EGGPLANTS (Patlıcan Dolması)

3 long (Italian) eggplants or 6 small ones
All other ingredients are the same and are prepared in the same way as for stuffed peppers.

Cut the tops and if the eggplants are long enough cut them into halves. Core each cup carefully without tearing the edges. Proceed as for stuffed peppers except that you add 1/4 of the eggplant which was scooped out to the stuffing (this must be chopped into small pieces) to the rest of the ingredients.

Serves 6.
