PUMPKIN DESSERT (Kabak Tatlısı)

2 Ib pumpkin
1 1/2 cup sugar
1/2 cup water
1 cup crushed walnuts
a dash of salt (optional)

Cut pumpkin into small pieces and then peel and cut them into 1/2 inch thick strips. Place them in a pan, add sugar and water and cook on medium heat until pumpkin becomes transparent (specially those on the edge of the pan). Cool and remove with a spatula without mixing them on a platter and cover top with crushed walnuts. (The layers must not be disturbed as much as possible - that is why it must not be cooked in a deep pot but a shallow one or a pan.)
