Home-made
dough:
8 cups flour
4 eggs
1 cup water
6 teaspoons oil
2 teaspoon vinegar
2 teaspoon salt
1/2 cup melted butter or margarine
Filling:
4 cups chopped leaf spinach
2 large onion finely chopped
1/2 cup oil
2 teaspoon salt
2 teaspoon black pepper
1 cup crumbled feta cheese

Make a well of
the flour in a large bowl, add salt, water, egg yolk and I tablespoon oil and
make a soft dough. As each ball is flattened out in to a 20 inch circle place it
in a round pyrex or teflon pan which should be brush with oil. Dough may be
gathered and each layer well sprinkled with half milk and oil mixture (1 cup
milk, 1/2 cup oil). When four layers are completed filling (double recipe)
should be spread evenly and four more layers placed on top of each other. Final
top layer should be brushed with melted butter and one well beaten egg. Bake
this borek in a moderate oven for 1 hour and cut into desired sized squares.
Note:
You may use store-bought frozen filo dough to prepare this dish but use two sheets
together like one, or butter every other sheet.
