Dried Navy or Nothern Beans

DRIED NAVY OR NORTHERN BEANS (Pilaki)

1 1b dried navy beans
3 large onions and 3 large tomatoes
1/2 cup olive oil
1/2 teaspoon salt
2 teaspoon sugar
2 cups water
1/2 bunch parsley

Soak the beans in water, about 5 cups (this is in addition to the 2 cups) overnight. Boil beans in this water until they are soft, put them through a coliander and do not use this water. Chop the onions and place it in a pot adding the oil and cook until they are transparent. Chop peeled and seeded tomatoes and add to the oninons, cook them until they are quite soft, then add the partially cooked beans salt and sugar and the water, simmer over medium heat for about 1/2 hour or more until the beans are well cooked but not mushy.

Serve at room temperature.
