FRESH PINTO BEANS (Taze Barbunya Fasülyesi)

2 1b fresh pinto beans
3 large onions
3 large very ripe tomatoes
1 cup cooked diced carrots
12 cloves garlic
1 1/2 teaspoon sugar
2 teaspoon sugar
3/4 cup oil 9 (olive oil should be preferred)
1 cup water)

Shell fresh pinto beans and boil them for 15 minutes. Chop the onions into very small pieces and place them in the cooking pot with the oil stir until transparent then add the peeled and seeded tomatoes you have cut also into small pieces. Cook onions and tomatoes for about five minutes and add the boiled beans, garlic, salt, sugar and water. Cover and simmer for about thirty minutes or until beans are very soft but not mushy, you might need to add some more water if necessary.

Serve garnished with lots of chopped parsley and in room temperature.
