Zucchini Patties with Cheese

ZUCCHINI PATTIES WITH CHEESE (Mücver)(Kabak Köftesi)

medium zucchinis
1 cup feta cheese
1/2 cup chopped parsley
1/2 cup chopped
dill, fresh (1 tsp. dry dill weed)
1 tsp. ground black pepper
3 eggs, beaten
1
cup regular flour
1 cup corn oil
Peel
and grate the zucchinis into a deep bowl, add feta cheese, crumbled by hand and
all the rest of the ingredients except the oil and mix well with a fork. Place
oil on the frying pan and heat, drop the zucchini mixture with a soup spoon and
fry both sides until golden, serve hot but is also good if eaten cold.
Serves
4.
This
mixture can also be baked in a 8x13 inch pyrex dish for ½ hour at 350° and cut
into squares and served hot.
